Having succeeded Tsuyoshi Imoto in January, 2006, Hirofumi Uchiyama is our second Head
Brewer since the establishment of Sun Masamune in 1996. Hirofumi is a well known sake-brewing
specialist from Nada district of Japan - a major centre of Japanese sake brewing industry, where
he worked for Tatsuuma Honke Brewing Co Ltd (known for its white deer hakushika brand established in 1662)
for over 30 years.
Hirofumi applies his knowledge to every aspect of sake-brewing activities including
quality control, R&D and new product development, reflecting his experience in the development
of sake bi-products such as skin care and soap products. At Sun Masamune, Hirofumi realizes the
importance of the cultural aspect of sake brewing, and strives to strengthen our presence and
increase production but not at the expense of quality of sake or work environment.
The style of sake produced at Sun Masamune is Tanrei Karakuchi (light and dry). But lately consumers have begun to
demand not only light sake but also sake with impact. As such, we continue to evolve with
the times, and we are now brewing sake that is still basically light but with a fuller presence as well.
