Go-Shu Australian Sake is pure rice wine that respects the traditions of finest quality sake, but enjoys the benefits of Australian Japonica rice and pure water from the Blue Mountains. Top quality grain rice is finely and gently polished to varying degrees depending on the sake to be produced. After polishing, the rice is washed, soaked and steamed. Special Koji mould is then added to the steamed rice and incubated for three days, and a culture of rice, Koji rice, filtered water and special sake yeast is created to ferment the rice to alcohol. The raw sake is filtered to remove suspended sediment and cloudiness, and the draught sake is then pasteurised and stored in tanks for two to three months to mature and mellow prior to bottling.
